INGREDIENTS
1 package instant ramen noodles only
1 vegetable stock cube, quartered
1 tbsp. low-sodium soy sauce
1 tsp. hot sauce (omit if required)
1 tsp. ginger
1 c. shredded chicken
1/2carrot, grated
1 c. baby spinach
2 tbsp. shallotsI
METHOD
Boil ramen noodles until al dente, just about 2 minutes. Drain immediately and run cold water over the noodles to stop the cooking.
Place stock cube crumbled in a saucepan. Add soy sauce, hot sauce and fresh ginger. Top with 2 cups of water and boil until stock cube is fully dissolved.
Top with shredded chicken, then add the noodles, baby spinach and carrots and stir to combine.
Divide between bowls and top with shallots.
Enjoy right away!
