This one is a team favourite. Don’t let the name fool you, these are great for breaky, lunch, dinner or snacks!!
INGREDIENTS
4-6 Long rolls of any sort (enough to feed the family)
4 pieces of shortcut Bacon (diced or thinly sliced)
1 cup of baby spinach
2 Tomatoes
1 Chorizo
4-6 Eggs
1/4 cup of melted Butter
2 cups grated cheese
Salt & Pepper
METHOD
Pre-heat the oven to 160c
Slice the top from the rolls and hollow out the centre
In a fry pan add the bacon and chorizo until cooked
Then add the tomatoes to lightly fry and the spinach to wilt
In a bowl whisk the eggs, season with salt and pepper.
Brush the melted butter inside the rolls
Once cooled add the bacon, chorizo, tomatoes and spinach to the eggs
Evenly distribute the egg mixture amongst the rolls
Top with cheese and bake for 15-20 minutes
